A classic Holiday dessert utilizing pantry staple ingredients for melt-in-your-mouth buttery pecan snowball cookies. A perfect addition to any cookie box or family gathering.

What are snowball cookies made of?

Pecan snowball cookies are a simple, no-chill recipe. The cookies are rolled in powdered sugar to resemble “snowballs”.

Make this recipe in 30 minutes, all you need is:

  • butter – you can use a vegan butter if necessary, just make sure it’s in stick form so it’s easy to measure
  • powdered sugar – also known as confectioners sugar
  • extracts – we used vanilla extract and almond extract
  • all purpose flour – you can sub for a gluten free all purpose flour if necessary
  • salt
  • toasted pecans – you can also use toasted walnuts or hazelnuts
How do you freeze snowball cookie dough?

If you want to prep these cookies ahead of time, roll the cookies into balls and place them on a baking sheet lined with parchment paper and freeze. Once frozen, place them in a freezer safe bag or airtight container and freeze for up to 3 months.

Pecan snowball cookies are best if stored in an airtight container at room temperature for 5 days or placed in a freezer safe bag or container and freeze for up to 3 months.

Buttery Pecan Snowball Cookies

When making these snowball cookies, pecans add texture and flavor for a crunchy and delicious Holiday treat.

Here’s how to make them:

  1. Pre-heat the oven and prepare a baking sheet

    Pre-heat the oven to 350 F° or 176 C° and prepare a baking sheet with parchment paper or a non-slip mat.

  2. Make the cookie dough

    Using a stand alone mixer or hand mixer, cream together the butter and powdered sugar until well blended. Add in the extracts. Finally add in the flour, salt and pecans and mix until a dough forms.

  3. Bake the cookies

    Use a 1 ½ inch cookie scooper to make 20 evenly sized dough balls. Place the balls onto the baking sheet at least 2 inches apart. Bake for 10-12 minutes and lightly golden.

  4. Roll the cookies in powdered sugar

    Remove and let cool for 5-10 minutes on a cooling rack. Once cooled, roll in powdered sugar and return to finish cooling completely. Once cooled entirely, roll in powdered sugar one more time before serving.
