Oven Roasted Carrot Fries

Crispy oven roasted carrot fries are seasoned with paprika, dried basil and salt for a perfect vegetarian snack or side dish to compliment any meal. A healthy alternative to it’s traditional counterpart, this simple snack is loaded with vitamins and minerals like vitamin c and potassium.

I created this recipe when I was wanting something hearty and snacky to eat but couldn’t find anything in the cupboard that satisfied me.

I love carrots so I thought I’d have a go at turning them into fries, which turned out super well! They’re really crispy and are also healthy (carrots are full of vitamins and nutrients!) and cost barely anything, which is great as a student living on a tight budget.

I even had them twice in one day – once with a homemade satay dip (made using just sweet 1 tbsp chili sauce, 1 tbsp peanut butter and 1 tsp soy sauce) and once with vegan fish fillets. Creating recipes for budget-friendly snacks and meals has become a very important hobby for me, and this one ticks all the boxes! 

Are carrot fries healthier than potato?

Carrots and potatoes both have great nutritional value. Potatoes have more carbohydrates and are more starchy than carrots.

How do you cut carrots to make them look like fries?

Wash and peel your carrots and them cut them in half (long-wise) and then in half again to make four long carrot sticks out of each carrot. You can then trim or cut those to your desired length.

How to make oven roasted carrot fries

The key to perfectly crispy carrot fries is to toss them in flour and roast them at a high temperature.

Don’t forget to add your favorite seasonings!

  • Preheat your oven to 200 degrees Celsius or 400 degrees Fahrenheit.
  • Wash your carrots and and peel/trim them.
  • Chop your carrots in half length-wise and then into quarters or your desired fry thickness.
  • Add the fries to a large bowl and drizzle with olive oil. Top with seasonings and flour and then toss until everything is evenly coated.
  • Spread the fries out into an even layer on large baking sheet lined with parchment paper. Bake the fries for 20 minutes, remove from the oven and rotate the fries and then continue cooking for an additional 20-25 minutes and crispy.
  • Enjoy on their own or with your favorite dip!

These carrot fries are absolutely delicious–dare I say better than sweet potato fries? Definitely a close call. My only complaint was that I wanted more. Two carrots (as the recipe originally called for) just wasn’t enough to serve two people so I added a few more carrots.

Ingredients
  

  • 8 large carrots
  • 3 tbsp olive oil
  • 8 tbsp flour
  • 2 tsp dried basil
  • 2 tsp smoked paprika
  • salt and pepper

Instructions
 

  • Preheat your oven to 200 degrees Celsius or 400 degrees Fahrenheit. Wash your carrots and and peel/trim them.
  • Chop your carrots in half length-wise and then into quarters or your desired thickness. Add the fries to a large bowl and drizzle with olive oil. Top with seasonings and flour and then toss until everything is evenly coated. 
  • Spread the fries out into an even layer on large baking sheet lined with parchment paper. Bake the fries for 20 minutes. Remove from the oven and and use a spatula to rotate the fries and then continue cooking for an additional 20-25 minutes and crispy.

Notes

These carrot fries can be seasoned with your favorites like: garlic powder, onion powder and cumin. 
Best if enjoyed immediately.
